Healthy Pregnancy Snack – Chia Puddings

Chia seeds are loaded with nutrients to support a healthy pregnancy. They are high in protein, omega fatty acids and dietary fibre, which will help regulate bowel movements – a common issue during pregnancy. The rich chocolate flavour is also great for when chocolate cravings hit.

These chia puddings are super nourishing for your growing bump, are easy to make and can be enjoyed as breakfast or a snack.

The best part about this recipe is that you can make it the night before and place in the fridge overnight to set. This way, if you’re short on time, you can take it with you in the morning and eat on the go.

Chocolate Raspberry Chia Puddings

Ingredients

  • 400 ml coconut cream
  • 1 cup frozen raspberries
  • 2 tablespoons maple syrup or pure honey
  • 2 tablespoons cacao powder
  • 1 teaspoon vanilla extract
  • 4 tablespoons chia seeds

Instructions

  • Place the coconut cream, raspberries, maple syrup/honey and vanilla extract in a blender or food processor and blitz on high until the mixture is smooth.
  • Add the chia seeds and stir through to combine.
  • Pour the mixture into four serving cups or jars and pop in the fridge to set overnight.
